Responsibilities include: 

Oversee the efficient and safe preparation of food items in the Richman Beer Garden's dynamic outdoor kitchen, ensuring all dishes meet our high standards for quality and presentation. As Lead Cook, you will manage kitchen operations in an open-air environment, provide guidance to team members using our outdoor cooking equipment, and ensure a seamless service experience for our guests in our lively outdoor setting.

* Coach and direct all cooks and assistant cooks to work in a productive and efficient manner.
* Assist in work direction to kitchen staff, ensuring work procedures, quality standards, and menu specifications are adhered to. 
* Maintain control of the kitchen and inform chefs if staffing levels are not appropriate based on business volumes.
* Assume limited charge of the kitchen on respective shifts and limited accountability of supervisors in their absence. 
* Coordinate and communicate on orders with dining room staff.
* Prepare a daily prep list and written daily orders.
* Prepare all food items according to standard recipes and menu specifications, ensuring consistency of product quality for guests.
* Read food orders from computer printouts and prepare food items according to established menu plans.
* Wash, slice, peel, and/or cut various foods to prepare for cooking or serving.
* Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils. 
* Expedite all food orders promptly and in a timely manner.
* Strive for picture perfect plate presentation.
* In an open kitchen environment, engage guests each time they come to your area. Explain products, ask questions, and build positive relationships.
* Anticipate guests' needs and respond appropriately with a sense of urgency.
* Receive and deliver food to the proper areas.
* Use and maintain all assigned areas and equipment in a sanitary, safe, and effective manner.
* Observe and enforce Health Department regulations regarding food handling, storage, proper reheat, cooking, cooling, & holding temperatures, and cleanliness of the work environment. Responsible for having a full knowledge of the MSDS program. 
* Ability to work with small, delicate, and sensitive equipment (i.e., knives) requiring fine finger dexterity.
* Maintain a well-groomed, neat, and clean appearance.
* Complete opening, closing, and other side duties assigned by supervisors.
* Be in constant communication with Sous Chefs.
* Responsible for learning and being familiar with all of Ameristar Casino Resort and Spa's rooms, outlets, and for being able to answer general questions regarding the property. 
* Consistent attendance at company/restaurant training programs as they are scheduled.
* Pass all tests given including the training to retain the knowledge needed to be an effective team member.
* Possess the ability to work harmoniously with coworkers.
* Perform all job functions in conjunction with the guidelines described in the Standard Operating Procedures manual to ensure consistent execution of company and department standards.
* Perform all duties assigned by management. 
* Ability to work the line in various locations: sauté, broiler, appetizer, pantry, pasta, grill, etc.

Qualifications:

* At least three (3) years of experience related to the specified capabilities, including proven experience leading or supervising a kitchen team in a fast-paced environment.
* Possession of and ability to maintain a valid ID within assigned state of employment.
* Must have basic reading and math skills for recipes and measurements.
* Must be at least 18 years of age.
* Demonstrated ability to prepare a wide variety of food items, to standard, in a high-volume, fast-paced operation.
* Proficiency in various cooking techniques, including grilling, sautéing, and sauce preparation.
* Demonstrated understanding and knowledge of the application of sanitation procedures.
* Valid food handler's permit or ServSafe certification required or able to obtain within 30 days of employment.
* Excellent communication and interpersonal skills, with the ability to effectively communicate with team members and management. 
* Ability to solve problems, and make decisions quickly, in a fast-paced environment.
* Strong organizational skills, with the ability to manage time effectively and prioritize tasks.
* Knowledge of standard kitchen equipment, and the ability to safely use that equipment.
* Thorough knowledge of health department regulations, and food safety standards.
* Extensive experience working in a high-volume kitchen.
