Responsibilities: *** This position is an on-site position located in Hartsville, TN (About 50 miles out-side of Nashville, TN) *** *** $3,500 sign-on bonus *** *** We do offer assistance with relocation, if needed *** The Food Service Director plans, direct and coordinate the activities of running a large food service operation with one or more production kitchens. This position oversees the kitchen's operational and financial responsibilities. This position supervises an Assistant Food Service Director and/or a team of Food Service Supervisors and/or Cooks who are involved with the preparation, serving and clean-up of food in a secure correctional facility. Other duties as determined by the needs of the business. * Responsible for the supervision, training, and management of the facility food service operation. * Instruct team members and/or inmates in general food service practices, including the preparation, cooking, and serving of food. * Coordinate the workflow and assign work to team members. * Oversees the appropriate quantities of food are prepared and served according to facility or site plan. * Insures all team members are adequately trained and capable to perform job responsibilities in a safe and compliant manner. * Knows and complies with client's contractual obligations. * Responsible for maintaining accuracy of inventory in advance preparation of planned menu schedule. * Insures ordering and all required reports are completed accurately and on time. * Responsible for overseeing all preventive maintenance programs to protect the physical assets of the Program. * Manages food service operation in compliance with internal policies and procedures as well as required local, state and federal laws and regulations. * Ensures that food items are stored in a safe and hazard free manner. * Plans for special events and functions thru participation in meetings with assigned customer facility operations staff. * Maintain all serving schedules and ensure that all food items are served per menu specifications in a safe and appropriate manner according to departmental guidelines. * Maintain a sanitary environment following food service and Health Department codes and regulations. * Maintain accurate on-site reports of daily and monthly financial, production, and activity * Responsible for any state or other inspection of food service operation. * May participate in the contract negotiation and renewal process. * May perform other duties as assigned. Qualifications: * High school diploma or Equivalent, and you must be at least 18 years of age. * Five years' of management or supervisory experience in a food service environment. * A valid driver's license is required. * ServSafe Certification. * Knowledge and experience managing and applying kitchen sanitation and safety standards and methods. * Knowledge of basic accounting and mathematical abilities to complete necessary reports High School Diploma or Equivalent.
