Responsibilities:
* Follows quality standards and menu specifications to prepare and cook foods.
* Practices safe food handling procedures and monitors staff in this area.
* Responds to servers' questions about recipes and cooking techniques.
* Washes, peels, cuts, and seeds vegetables and fruits.
* Cleans meats, poultry, and seafood.
* Stirs and strains soups and sauces.
* Weighs and measures designated ingredients.
* Knows all food items required; identifies different items ordered and pulls the correct items for cooking. Identifies all meat, produce, dairy products, and dry goods, identifies rotation needs; knows cooking times to ensure that correct cooking is achieved; identifies proper cooking temperatures and temperature danger zones.
* Stores foods in designated areas.
* Resolves food quality complaints from management or servers.
* Responsible for overall cleanliness of the kitchen and periodic maintenance of equipment.
* Cleans and sanitizes work areas, equipment and utensils.
* Correctly sets up, operates, breaks down and cleans all equipment including ovens, slicer, kettles, mixer, hoods, fryers, steam tables, refrigeration units, store rooms, floors, and dish machine; uses cleaning compounds.
* Follows safety and sanitation practices.
* Special orders/requests will be honored whenever product to fulfill the order is available.
* Cooks will treat all servers/co-workers in a professional, courteous manner 100 percent of the time.
* Cooks will communicate out of stock items ("86 List") as soon as stock is low and/or cooks anticipate running out of the item(s). This will prevent servers from placing an order for items we that are no longer available.
Qualifications:
To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required. * High school diploma or equivalent
* Prior experience as Cook in high volume food service operation preferred.
* Knowledge of kitchen sanitation, operation, and maintenance of kitchen equipment
* Basic knowledge of food preparation techniques
* Knowledge of weights, measures and recipe yield
* Possess and maintain culinary tools (knives) to perform the necessary job functions
* Read, write legibly, understand and speak English
* Excellent customer service/communication skills
* Available to work required schedule which may include nights, weekends, holidays and overtime as needed
* Must meet professional appearance standards as prescribed by company policy.
* Must be physically mobile with reasonable accommodation
* Must be able to respond to visual and oral cues
* Able to work in constricting areas
* Must be able to tolerate areas with high temperatures
* Must be able to tolerate industry standard chemicals used for cleaning and sanitizing
* Able to work at a fast pace in often crowded/noisy environment
* Must be able to maintain a neat, professional, well-groomed appearance and uphold company appearance/dress standards
* Physically mobile with reasonable accommodations including ability to push, pull, carry and lift up to 25 lbs., and the ability to push, pull, reach, bend, twist, stoop, stack, crouch, kneel and balance when performing job duties in varying work areas such as confined spaces
