Initial placement within the salary range is based on an individual's relevant knowledge, skills, and experience. Responsibilities:
* Prepares all orders according to specification.
* Preps food items (e.g., soups, sauces, meats, vegetables, baking as needed, etc.) for daily use.
* Preps line for each meal. Stocks backup (e.g., steaks and seafood) in cooler.
* Keeps service area clean. Sanitizes, cleans hood vents, washes walls, sweeps and mops, etc.
* Rotates and labels food in cooler.
* Prepares closing: restocks, wraps open foods, puts foods in cooler, etc.
* Confers with Culinary Management as to up to date reservation and house counts as appropriate.
* Checks with Culinary Management for preparation and presentation of daily specials, substitutions, and product use and availability.
* Completes opening and closing side work completely.
* Notifies Kitchen Management when supplies are running low. Requests inventory items from supervisors using Stratton-Warren system.
* Secures all equipment needed for line production.
* Inventories amounts of prepared food from previous day.
* Transfers foodstuffs from walk-in to reach-in.
* Employees may be required to perform duties outside of their normal job description where, in the Company's judgment, it is necessary in the interest of efficiency, productivity, or improved guest service.
Qualifications:
* Must be a minimum of 18 years of age.
* High School Diploma or equivalent.
* Five years of prior experience as Cook in high-volume food service operation.
* Knowledge of kitchen sanitation, operation, and maintenance of kitchen equipment.
* Basic knowledge of food preparation techniques.
* Knowledge of weights, measures, and recipe yield.
* Possess and maintain culinary tools (knives) to perform the necessary job functions.
* Read, write legibly, understand, and speak English.
* Excellent customer service/communication skills. Available to work required schedule which may include nights, weekends, holidays, and overtime as needed.
* Must meet professional appearance standards as prescribed by company policy.
* Must be able to respond to visual and oral cues.
* Able to work in constricting areas.
* Must be able to tolerate areas with high temperatures.
* Must be able to tolerate industry standard chemicals used for cleaning and sanitizing.
* Able to work at a fast pace in often crowded/noisy environment.
* Physically mobile with reasonable accommodations including ability to push, pull, carry, and lift up to 25 lbs., and the ability to push, pull, reach, bend, twist, stoop, stack, crouch, kneel, and balance when performing job duties in varying work areas such as confined spaces.
