Overview:
This position is physically located in Balad, Iraq
Under direct supervision, the Butcher prepares meat for use using a wide variety of processes. Will be responsible for handling, deboning, trimming, tying, grinding, or tenderizing cuts of meat, but they are also often in charge of packaging, weighing, labeling, and pricing their goods. They may work with beef, poultry, pork, lamb, or seafood, and they may be responsible for creating specialized meat products such as ham or sausage.
Responsibilities:

* Follow all regulations, policies, and procedures regarding food handling, personal hygiene, safety, and proper sanitation.
* Thaw meat products IAW approved procedures.
* Clean and sanitized all surfaces in work prep areas, equipment in the butcher room
* Prepare all products IAW approved recipe cards and SOPs
* Perform any other tasks as need from the DFAC management
* Attend all meetings and training as required
* Perform other qualified duties as assigned
Qualifications:
* MINIMUM QUALIFICATIONS: Education/Certifications: One-year related experience may be substituted for one year of education if degree is required.
* Must have a High School diploma or equivalent
* Must have and maintain a current Serve-Safe certification (Within 3 years).
* Must be able to read, write, speak and understand English fluently.
* Experience:
* Should have a minimum of 2 years of food operation experience with preferably 1 years of large-scale food operations.
* OCN Requirements:
* Must have a High School diploma or equivalent
* Must have and maintain a current Serve-Safe certification (Within 3 years).
* Must be able to read, write, speak and understand English fluently.
* Minimum of 2 years of food operation experience with preferably 1 years of large-scale food operations.
* Previous Food Service Experience as a Butcher
* Skills:
* Must be able to perform math skills in converting units of issue for meat products with production schedule requirements to be pulled and staged correctly for thawing.
* Should be knowledgeable in HACCP and Serv-Safe.
* Be able to learn the TB MED 530, and U.S Department of Health and Human Services Food Code standards.
* Must be able to work under pressure.
* Service oriented.
* Working Conditions:
* Must be capable of working in an extreme weather conditions with temperatures exceeding 120 degrees Fahrenheit.
* Indoor and/or outdoor environment with very adverse and harsh conditions (i.e., hot, dry, dusty, desert environment with average temperatures of 30 degrees in the winter and 130 degrees in the summer months).
* Includes some industrial production environment conditions as well.
* Physical Requirements:
* Light work. Exerting up to 20 pounds of force occasionally, and/or up to 10 pounds of force frequently, and/or up to 10 pounds of force constantly to move objects.
* Work may require heavy lifting, stooping, climbing, prolonged standing, prolonged sitting, and working with or in areas where a potential could exist for exposure to physical, chemical, or biological agents.
* Employee use of personal protective equipment (PPE) is required for some situations. PPE includes, but is not limited to, head, foot, torso, respiratory, vision, and hearing protective devices.
* Must comply with all Fire and Safety Regulations and post policies.
